• 2 onions – finely chopped
  • 2 cloves garlic - crushed
  • 2 tbsp extra virgin olive oil
  • 1tsp black pepper
  • 2 courgettes - chopped
  • 1 aubergine - chopped
  • 2 tbspn tomato puree
  • 1 tbspn demerara sugar
  • 1 tbspn cider vinegar
  • 1 tbspn soya sauce
  • 1 can chopped tomatoes
  • 1 tspn mixed herbs
  • 1 tspn dried oregano
  • 2 dried bay leaves

Method:
Lightly fry onions and garlic with black pepper in olive oil until soft.
Add courgette and aubergine, and stir over low heat.  The aubergine can be like a sponge and soak up a lot of oil. Add more if necessary.
Add tomato puree, sugar, vinegar and soya sauce and stir for a couple of minutes until coated.
Add can of chopped tomatoes and dried herbs.  Bring to boil, cover and simmer gently until vegetables are soft, about 20 minutes.
